Spreading like wildfire: the word on suka pinakurat, that spicy coconut vinegar from Iligan

Suka Pinakurat, which for some is a derivative of sukang tuba, is not just your ordinary spicy coconut vinegar. What makes suka pinakurat unique is the way it is made, ie, via fermentation of organic coconut sap and mixed in with natural spices blended to perfect harmony with organic “kulikot” chilis harvested from the mountains of Iligan City in the Philippines province of Lanao del Norte in the island of Mindanao.

Suka pinakurat, is best used as a dipping sauce for any kind of food, including meat-based, poultry-based, or fish-based viands and noodles such as "kinilaw pancit" or kinilaw a la Cebu. The number of food lovers wanting to partake of the distinctive sweet, spicy, and extra hot taste of suka pinakurat continues to grow as it becomes available in foreign shores, including those in Europe, Australia, and America.
